Managed by the father-son duo Alberto and Diego Guardia, the estate is renowned for its focus on alternative processing methods and a vast catalog of over 20 plant varieties. This specific lot features the Sarchimor variety—a hybrid known for its resilience and complex cup profile—processed using an anaerobic natural method. By fermenting the cherries in a low-oxygen environment before drying them whole, the Guardias have intensified the coffee’s natural sugars and fruit characteristics.
