Having cultivated coffee since age 13, Jorge transitioned into specialty coffee in 2016, specifically focusing on refining fermentation techniques to elevate variety clarity. This lot begins with a meticulous hand-selection of cherries, followed by fermentation in sealed, oxygen-free tanks. This anaerobic environment allows microbes to break down sugars and acids in a controlled way before the coffee is pulped, washed, and dried. The result is a sparkling and exceptionally clean cup, defined by the candy-like sweetness of pink starburst, delicate white florals, and a classic bergamot finish typical of high-altitude Geisha
