This lot features the Pink Bourbon variety, processed through an incredibly elaborate "Honey Mango" co-fermentation. The journey began with a 120-hour anaerobic fermentation using specific yeast cultures, followed by the addition of fresh mango puree and CO2 injections to intensify the tropical aromatics over another 72 hours. This high-energy process results in an explosion of fruit clarity; it tastes like a balmy tropical sunrise, dominated by juicy mango and bright clementine notes, all elegantly lifted by the delicate floral sweetness of honeysuckle.
