This technique allows the sugars to caramelize and penetrate the seed, adding a layered sweetness to the classic floral Sidama profile. The result is a cup of immense nuance, featuring delicate rose petal aromatics and a bright pomegranate acidity, grounded by a structural cocoa depth and a sweet, lingering finish of cherry jelly
